Fried millet is simply one of the best dishes ever.
Making fried millet is very simple. Just cook millet in your rice cooker. You can steam some vegetables on top if you have a steaming tray. Today I steamed broccoli stalk and carrots.
When the millet is done put it in your wok. My favorite new oil for frying is avocado oil of which only a very small amount is needed.
I like to leave the millet cook for a long time with the (electric) wok on a medium setting. After about 20 minutes or longer the millet will start to get slightly crispy. You can then add some spring onion to it.
Today I added avocado and olive oil to my fried millet and seasoned it with organic curry powder and french sea salt.
I’ve written before that millet is a superior grain. It is possibly the best grain. Unlike rice it doesn’t contain high levels of arsenic. It’s extremely easy to digest and gentle on the body, yet it’s also very filling. Finally, it combines excellently with a wide array of other foods and seasonings.
