I was reading about the basic types of tastes and flavors and then was reading the section on sweetness which mentioned a “sweet index” of which sugar has a value of 1, and other compounds have either lower values (less sweet) or higher ones (more sweet). I was shocked to see that there are some compounds with sweetness values in the thousands!
