Its late at night and because, as often happens, I over-restricted my calories today (estimation was around 1200) and am finding it difficult to sleep. I decided to make a bowl of organic oatmeal from quick oats which I read somewhere are the most easily-digestible form. Plus the fact that they cook in a rice cooker in about 5 minutes is nice. Sometimes I like to add flaxseed in. But not always at night if I don’t want it to be too heavy.
I’ve written before about how amazing it is to add curry to things – for example you can take almond butter and coconut butter (or flakes or a mixture) and add a little bit of honey and then add curry to make it mind-blowing. Or you can add a little bit of nutmeg which makes it equally mind-blowing.
Continuing on this theme of adding curry to different things, lately I’ve been adding it to my breakfast porridge-type dishes.
I’m really lucky to live in a city where there are actually multiple varieties of organic curry powder mixes available at different places, so I’m just blissing out with all these different ones and the flavors.
It turns out that not only is the flavor of curry mind-blowingly blissful but so are the health benefits.
Curry seems to go really well with the diet that I try to follow – a vegan one with only very limited processed foods especially refined carbohydrates including sweeteners. If you are practicing a really healthy, pure, and holy diet then I think the impact that curry can have is intense.
But because I do not sometimes get enough calories I sometimes have rice chips which I like to have with refried beans or guacamole. I also sometimes have energy bars although lately the one’s I’ve been having are the GoMacro ones which have a lot less sweetener than most do. Their granola ones are pretty good and so are the banana ones.
I’m also trying to follow Buddha’s diet advice which is to eat only one meal a day and at night only drink liquids. He also said in the same sermon that if you are really hungry you can take some of the food with you and have it later.
