A low income but very healthy diet

Lately I’ve been living on an extremely thin budget but I’m still managing to take care of myself and eat very well. My philosophy is that if you do not eat a lot, then make sure that what you do is is extremely healthy.

One of those extremely healthy dishes I’ve been enjoying is simple to make yet tastes excellent: White quinoa mixed with millet (about 2 parts white quinoa to 1 part millet). I make it in the rice cooker and in the steaming tray I like to make either sweet potatoes or regular potatoes, and some vegetables. Lately I’ve been having brussel sprouts but other possibilities include things like green beans, cauliflower, broccoli, etc.

Once it is done I add about 2 teaspoons of olive oil and then turmeric and a little bit of chili powder. I find that chili powder added to turmeric really enhances the flavor. Finally I will add sea salt, my favorite being french celtic sea salt.

One pot is enough for three bowls. If that were rice it would be too much, but because it is quinoa and millet is it s good amount and makes me full.
